Rolled Holiday Yule Log Cake
Make this festive rolled cake for the holidays. Use a fork to fashion ridges in the frosting so that the cake roll looks like a yule log. Use your favorite chocolate frosting.

6 eggs, separated
3/4 teaspoon cream of tartar
2/3 cup sugar, divided
1 teaspoon vanilla
1/4 teaspoon salt, optional
3/4 cup all-purpose flour
2 1/2 to 3 cups chocolate frosting
Confectioners' sugar

Preheat the oven to 400 degrees F. Lightly grease a 15 1/2-by-10 1/2-by-1-inch jelly roll pan. Line it with waxed paper and then grease the paper. Dust the pan with flour and tap out the excess.

In the large bowl of an electric mixer set at high speed, beat the egg whites with cream of tartar until foamy. Add 1/3 cup of the sugar, 2 tablespoons at a time, beating constantly until sugar is dissolved and whites are glossy and stand in soft peaks. Rub just a bit of meringue between thumb and forefinger to feel if sugar has dissolved.

In another bowl with the mixer set at high speed, beat egg yolks for 3 to 5 minutes or until thick and lemon-colored. Gradually beat in remaining sugar, vanilla, and salt until blended.

Sprinkle the flour over whites and then add the egg yolk batter. Gently fold these into the whites until incorporated. Scrape the batter into prepared pan and spread evenly with a rubber spatula.

Bake for 10 to 12 minutes or until the cake springs back when lightly touched with finger and begins to pull away from sides of pan.

Dust a clean tea towel with confectioners' sugar. With narrow spatula or knife, loosen cake from sides of pan and invert onto the prepared towel.

Carefully peel the wax paper off bottom of cake. Trim the edges with a serrated knife. Starting from short edge, roll the warm cake into a roll, using the tea towel as a guide. Place wrapped roll seam-side down on wire rack for at least 30 minutes or until cool.

Carefully unroll cake and spread it with the desired filling. Leave a border around the edges of the cake. Re-roll and place seam-side down on a serving platter.

Spread frosting over the top of the roll. Use a fork or blunt knife to fashion ridges in the frosting to make it look like a log.

Just before serving, dust with confectioners' sugar, if desired, to resemble snow. Decorate as desired.

NOTE: If prepared in advance, cake may be frozen without filling. Wrap well with aluminum foil or plastic wrap. To thaw, let wrapped cake stand at room temperature for 1 hour.
