Strawberry Nut Bread

3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
2 cups sugar
4 eggs
1 1/4 cups Vegetable Oil
2 packages (10 ounces each) frozen strawberries, thawed and sliced
1 1/4 cups chopped pecans

Preheat oven to 350 degrees F. Sift together flour, baking soda, salt, cinnamon, and sugar into a large bowl. Add eggs and oil, and mix well. Add thawed strawberries with juice and pecans. Mix well with an electric mixer. Pour into two greased and floured 8 x 4-inch or 9 x 5-inch loaf pans. Bake for 1 hour or until bread tests done. Let stand for 5 minutes, remove from pans, and cool on wire racks. Freezes well.
