1/2 cup Vegetable Oil
|
1 egg
|
1 cup sugar
|
1 cup unsifted flour
|
1/2 teaspoon baking soda
|
1/2 teaspoon salt
|
1/2 teaspoon cinnamon
|
1/2 teaspoon vanilla
|
1 tablespoon dark rum, or brandy
|
2 Granny Smith apples, peeled and cored (or pippin apples)
|
1/3 cup chopped nuts
|

Preheat oven to 350 degrees F. Beat oil with egg until foamy. Stir in sugar, flour, baking soda, salt, cinnamon, vanilla, and rum. Finely chop 1 1/2 apples and add to batter with nuts. Batter will be stiff. Spoon mixture into a greased 9-inch pie pan. Slice remaining 1/2 apple and press into batter to form a swirl pattern. Bake for 35 to 40 minutes. This can be served warm with ice cream, hard sauce, or eggnog, as a dessert. It is also good cold.
