Alaska Black Cod Marinated with Honey

1 cup honey
|
1/2 cup low-sodium, gluten-free soy sauce
|
1/4 cup olive oil
|
1/3 cup white wine vinegar
|
6 Alaska Black cod fillets, 4 ounces each, fresh or thawed
|
Sea salt and black pepper to taste
|

Stir the honey, soy sauce, olive oil and vinegar together in a glass (or non-reactive) bowl. Put the cod fillets in the bowl, skin side up. Make sure the marinade covers the fish. Cover and refrigerate for 12 to 24 hours.
Preheat the oven to 450°F. Lift the fillets from the marinade and put them on a nonstick baking sheet, or one lightly sprayed with vegetable oil or lined with aluminum foil. Season the fish lightly with salt and pepper and roast until golden to dark brown, 7 to 9 minutes. Cook just until the fish is opaque throughout. Also check out the Alaska Style Recipes for Kids!
