Salt Rising Bread

3 medium potato, peeled and sliced 1/4-inch thick (about 3 cups)
|
3 tablespoons stone-ground cornmeal
|
1 teaspoon sugar
|
1 1/8 teaspoons salt
|
4 cups boiling water
|
2 cups lukewarm milk
|
1 cup water
|
1/8 teaspoon baking soda
|
2 tablespoons Crisco® all vegetable shortening, melted
|
all-purpose flour
|

Place the potatoes in a large bowl. Add the cornmeal, sugar, 1 teaspoon salt, and boiling water. Cover the bowl with a heavy cloth and allow to stand in a warm place overnight. In the morning, remove the potatoes. Stir in the milk, water, baking soda, remaining 1/8 teaspoon salt, and shortening. Add enough flour to make a dough that is just stiff enough to knead. Knead the dough on a lightly floured surface until it's smooth and elastic. Form the dough into 3 loaves. Place the loaves into 3 well-oiled loaf pans. Cover and let rise in a warm place until they're doubled in size. Heat the oven to 400° F. Bake the loaves for 45 minutes or until they're golden brown.
