Tomato Bread
A great way to use your abundance of garden tomatoes.
Serves: 6
Prep Time: 5 minutes
Cook Time: 3 to 4 minutes


6 slices French bread, 1/2-inch-thick
6 ounces (about 1 1/2 tomatoes) fresh plum tomatoes
3/4 teaspoon garlic, minced
1/2 tablespoon Grated Parmesan cheese, freshly

Preheat the broiler. Core and cut the tomatoes lengthwise into 6 slices.

Lay the bread on a broiler tray and toast on 1 side in the broiler. Turn the slices over, top each with a slice of tomato, and sprinkle with the minced garlic and Parmesan cheese. Return to the broiler until the bread has toasted and the cheese has begun to melt, taking care not to let it brown.
